This Cheese Condition Box is a very versatile piece of equipment that is BPA and PVC free and dishwasher safe.

Internal Measurements: 26cm long x 19 cm wide x 9.5cm high (from base with lid on) with an internal rack that sits 1cm off the floor of the container, giving a usable height of 8.5cm when the rack is in and the lid is on.  It also has a small rocker vent in the lid that can be left open or closed.

This piece of equipment and can be used in 2 ways:

  1.  To condition cheeses once they have been turned out of their molds.  It will take shaped curds from the following molds – 6 x mini or 3 x mini Gouda, at least 4 Bucheron or 2 x St Marcellin or 6 x Crottin or 4 x short pyramid or 3 x Camembert (molds with bottom) or 2 x small hoops or 3 heart shapes.
  2. As a draining rack with the lid off to drain cheeses whilst they are still in their molds.

Description

This Cheese Condition Box is a very versatile piece of equipment that is BPA and PVC free and dishwasher safe.

Internal Measurements: 26cm long x 19 cm wide x 9.5cm high (from base with lid on) with an internal rack that sits 1cm off the floor of the container, giving a usable height of 8.5cm when the rack is in and the lid is on.  It also has a small rocker vent in the lid that can be left open or closed.

This piece of equipment and can be used in 2 ways:

  1.  To condition cheeses once they have been turned out of their molds.   The rack allows whey to drain away and air to circulate.  Any drained whey should be tipped out and the box wiped with an absorbent paper towel at regular intervals.  If a white rind is being grown your cheeses should be moved at least once a day so that the cheese does not adhere to the rack.  The box sits in your cheese fridge.  The humidity inside the box is controlled by placing the lid not fully on but at an angle across the top (askew) to allow for some air circulation with some humidity build up or fully on the box with the small vent open for very high humidity.  The type of cheese and your fridge set up will determine how you manipulate this.  It will take shaped curds from the following molds – 6 x mini or 3 x mini Gouda, at least 4 Bucheron or 2 x St Marcellin or 6 x Crottin or 4 x short pyramid or 3 x Camembert (molds with bottom) or 2 x small hoops or 3 heart shapes.
  2. As a draining rack with the lid off to drain cheeses whilst they are still in their molds.  Depending on what cheese you are making, the whey will have to be tipped out frequently to avoid a soggy bottom! It will accommodate the molds listed above plus 2 x 800g molds or 1 x 1.8kg.
