White Mold Powder available as a tube or a sachet.  The tube has sufficient quanity for approx. 250 L of milk and the sachet sufficient quanity for approx. 1,000 L of milk, depending on the recipe.

Description: This is a fast growing very white strain of Penicillium candidum mold culture that has a flavour that is particularly suited to goat and sheep milk cheese.  It imparts a more delicate flavour than the Chr Hansen strain of P. candidum that we also stock. This culture is from the VELV-TOP(R) range of cultures, manufactured by Lallemand  which are suitable for a vegan diet.  This culture does not contain milk products.

White Mold Powder available in a tube or sachet.

Amounts:  2.5u – qty for approx 250 litres of milk and 10u – quantity for approx. 1,000 litres of milk

Description: This is a fast growing very white strain of Penicillium candidum mold culture that has a flavour that is particularly suited to goat and sheep milk cheese. It will give a nice delicate flavour with cows milk.  It is an essential ingredient in the ripening process of white mold cheeses for its role in coloring the surface of the cheese, and contributing to the flavor and texture, as well as protection against contaminants.  It works particularly well when paired with Geotrichum candidum at a ratio 4:1.

This culture is from the VELV-TOP(R) range of cultures, manufactured by Lallemand  which are suitable for a vegan diet.  This culture does not contain milk products.
