Description
This Cheese Conditioning Box measures 30.3cm long x 22.8cm wide x 7.8cm high and has a 4-litre capacity. It has an internal drainage mat measuring 29.1cm long x 21.5cm wide, a snug fit in the base of this container that tapers slightly, meaning no space is wasted. It is BPA free and dishwasher, fridge and freezer safe. This conditioning box is shallower and wider than our alternative 4 L conditioning box and is of sufficient size to accommodate 6 camembert cheeses made using our camembert moulds. Your choice of conditioning container will depend on the height and diameter of the cheeses you are making.
You would use this container to condition cheeses once they have been turned out of their molds. The drainage mat allows small amounts of whey to drain away and for air to circulate fully around your cheese. Any whey should be tipped out and the box wiped with an absorbent paper towel at regular intervals. This conditioning box allows you to grow a white or bloomy rind on your cheeses by building up and maintaining a high humidity. Humidity levels are controlled by placing the lid not fully on but at an angle across the top (askew) to allow for some air circulation with some humidity build up. The type of cheese and your fridge set up will determine how you manipulate this. We do sell small lightweight hygrometers that can be stuck to the inside of your conditioning box that will give you a relative humidity reading.
