2 L Conditioning Box

Description

This Cheese Conditioning Box measures 22cm long x 15cm wide x 7cm high and has a 2 litre capacity.  It has an internal drainage mat measuring 22cm long x 15cm wide.  It is BPA free and dishwasher, fridge and freezer safe.  The internal mat is the same size as the mat in the 4 litre conditioning box but this container is around 3.6cm shorter.  Your choice of conditioning box will depend on the height of the cheeses you are making.

You would use this container to condition cheeses once they have been turned out of their molds.   The drainage mat allows small amounts of whey to drain away and for air to circulate around your cheese.  Any whey should be tipped out and the box wiped with an absorbent paper towel at regular intervals. This box allows you to grow a white or bloomy rind on your cheeses by building up and maintaining a high humidity.  Humidity levels are controlled by placing the lid not fully on but at an angle across the top (askew) to allow for some air circulation with some humidity build up.  The type of cheese and your fridge set up will determine how you manipulate this.  We do sell small lightweight hygrometers that can be stuck to the inside of your conditioning box that will give you a relative humidity reading.
