Penicillium Roqueforti Blue Mold Culture available in 2 sizes.  A tube of 2.5u sufficient quantity for 250+ litres of milk and a 10u sachet sufficient quantity for 1,000+ litres of milk. It is an indispensable ingredient in the production of blue cheeses.  Packaged with colour coded labelling for ease of use in your cheesemaking.

Description

Two sizes are available 2.5u tube and full 10u sachet.  The 2.5u tube is sufficient mold to inoculate around 250 litres of milk while the 10I sachet is sufficient for around 1,000L of milk.

Penicillium roqueforti is an indispensable ingredient in the production of blue cheeses where it contributes to the ripening in different ways:

  • The characteristic appearance of the cheese.
  • The typical blue cheese flavour (lipolysis).
  • The softening of the cheese and the wanted texture (proteolysis).
