Amount: 10u – qty for approx 1000 litres of milk.
Description: This is a fast growing very white strain of Penicillium candidum mold culture that has a flavour that is particularly suited to goat and sheep milk cheese. It imparts a more delicate flavour than the Chr Hansen strain of P. candidum that we also stock. The latter can be a little overpowering for goat and sheep milk. It is an essential ingredient in the ripening process of white mold cheeses for its role in coloring the surface of the cheese, and contributing to the flavor and texture, as well as protection against contaminants. It works particularly well when paired with Geotrichum candidum at a ratio 4:1.
