Description
This is the modern twist (plastic) on the natural straw traditionally used when making Ste-Maure cheese. The straw is inserted through the centre of the cheese after draining but before removing from the mould. It helps to hold the cheese together while unmoulding and helps with handling of the cheese, particularly when young. The straw also provides some aeration to the centre of the cheese during ripening.
