Penicillium roqueforti is an indispensable ingredient in the production of blue cheeses where it contributes to the ripening in different ways:
- The characteristic appearance of the cheese.
- The typical blue cheese flavour (lipolysis).
- The softening of the cheese and the wanted texture (proteolysis).
